GLUCIDS OR SUGAR

These are substances consisting of organic compounds such as: carbon, hydrogen, and oxygen. They are the main energy source for the body. The carbohydrates are found in the vegetable world, are divided into monosaccharides or simple sugars and polysaccharides formed by the composition of two or more molecules of monosaccharides. Foods rich in carbohydrates are monosaccharides: fruit, honey (glucose and fructose), while polysaccharides are: cane sugar and beet sugar (sucrose), milk and dairy products (lactose), malt (maltose), meat, fish (glycogen) , cereals, legumes, potatoes and tubers (starch), fruit (pectin), artichokes, onions, garlic (imulina). Let’s not forget that carbohydrates are derived from fermented beverages and dairy products (ethyl alcohol and lactic acid). In an unbalanced diet ,our body, through the use of fat, has to deal with the production of carbohydrates and proteins that have the purpose of providing energy (energy function), but will inhibit the construction of new cells and tissues (plastic function). In contrast, an excessive intake of carbohydrates through the introduction of food generates the risk of diabetes.
